  • 1 c. cornmeal
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 c. milk
  • 2 eggs
  • 1 can cream-style corn
  • 1/4 c. cooking oil
  • 1 lb. ground beef
  • 1 small onion, diced
  • spicy or mild Velveeta cheese, diced

Directions

    Mix first 7 ingredients and set aside.

    Brown ground beef and onion.

    Add to cornmeal mix.

    Add 1/2 cheese into mixture.

    Use other 1/2 cheese to pour on top.

    Bake in 13 x 9-inch ungreased pan at 350° for 45 minutes, uncovered.
