- 1 2/3 c. self-rising cornmeal
- 1/2 c. self-rising flour
- 1/2 c. sugar
- 1/3 c. sharp cheese
- 3/4 c. buttermilk
- 1 c. cream-style corn
- 2 eggs
- 2 to 3 jalapeno peppers, chopped
- 1/2 c. oil
- 1 medium size onion, chopped
Directions

1In mixing bowl, add cornmeal, flour, sugar and cheese.

2Put into blender corn, eggs, jalapeno peppers, oil and onion; chop well.

3Add this to first 4 ingredients and mix well.

4Add buttermilk and blend well.

5Pour in muffin pans and cook in 350° oven.

6Makes 24 muffins.
