- pastry for 2-crust 9-inch pie
- 36 Ritz crackers
- 2 c. water
- 2 c. sugar
- 2 tsp. cream of tartar
- 2 Tbsp. lemon juice
- grated rind of 1 lemon
- butter or margarine
- cinnamon
Directions

1Fit pastry into pie plate.

2Break crackers coarsely into pastry lined plate.

3Combine water, sugar and cream of tartar in saucepan. Boil gently for 15 minutes.

4Add lemon juice and rind.

5Cool.

6Pour syrup over crackers.

7Dot generously with butter and sprinkle with cinnamon.

8Cover with top crust.

9Trim and flute edges together. Cut slits in top crust to let steam escape.

10Bake at 425° for 30 to 35 minutes until crust is crisp and golden.
