Mushroom Wild Rice

Ingredients
- 4 c water
- 1 c uncooked wild rice
- 1 t butter or margarine
- 1-1/2 t salt, divided
- 1/2 c uncooked brown rice
- 8 bacon strips, diced
- 2 c sliced fresh mushrooms
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 medium sweet red pepper, chopped
- 1 celery rib, thinly sliced
- 1-14 1/2 oz can beef broth
- 2 T cornstarch
- 1/4 c cold water
- 1/2 c slivered almonds
Directions

1In a large saucepan, bring water, wild rice, butter and 1/2 t salt to a boil.

2Reduce heat; cover and simmer 40 minutes.

3Stir in brown rice and cover and simmer 25-30 minutes longer until rice is tender.

4While rice is cooking, brown bacon in a large skillet until crisp. Remove bacon and drain, leaving 2 T of the bacon drippings in the pan.

5Saute the mushrooms, onions, peppers and celery in the drippings until they are tender. Stir in broth and remaining salt and bring mixture to a boil.

6Combine the cornstarch and cold water until smooth and stir into the mushroom mixture.

7Cook 2 minutes until thickened then stir in almonds and bacon pieces.

8Drain the rice and add mushroom mixture.
