New Hampshire Squash Casserole

  • 2 c. cooked, mashed squash (1 medium winter squash; Turban squash is excellent
  • 2 Tbsp. butter
  • 2 Tbsp. brown sugar
  • 2 Tbsp. sweet or sour cream
  • 1/2 tsp. salt
  • dash of nutmeg and cinnamon
  • 1 egg, well beaten
  • 2 Tbsp. chopped walnuts or pecans

Directions

    Butter inside of casserole.

    Mix all ingredients well, except nuts.

    Pour mixture into casserole.
  4. 4
    Sprinkle with the chopped walnuts or pecans.
  5. 5
    (I use more over top.) Bake at 375° for 30 to 40 minutes, uncovered.
