  • Pastry:
  • 1 1/2 cups flour
  • 1/3 cup cold water
  • 1/2 t salt
  • 7 T cold unsalted butter
  • Filling:
  • 6 ripe peaches, peeled
  • 3/4 cup finely-chopped pecans
  • juice of 1 lemon
  • 1 egg yolk
  • 1/3 cup sugar
  • 2 T flour
  • 1/2 t cinnamon
  • 1 T butter

    Preheat oven to 425°. To make pastry, mix together flour and salt. Cut in butter using a pastry blender. Add just enough water so that mixture can be gathered to form a bell of dough. Roll dough into a circle 15 inches in diameter, 1/8 inch thick. Use pot lid or large plate to cut dough into 13 inch circle. Transfer pastry onto flat baking sheet.
