- 2/3 c. beet juice (reserve beets)
- 2/3 c. white vinegar
- 2/3 c. sugar
- 1 doz. eggs
Directions

1Bring beet juice, white vinegar and sugar to a boil.

2Cool before adding beets and eggs.

3Start eggs with cold water.

4Bring to a rolling boil.

5Turn stove off and let eggs set in water for 20 minutes.

6Run cold water over eggs and peel.

7Eggs will pickle overnight.
