  • 10 potatoes mediums
  • 1 1/2 cups ranch salad dressing Prepared
  • 2 cups shredded sharp cheddar cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 pound bacon Sliced, Cooked and Crumbled, Divided
  • chopped fresh chives

Directions

    Peel and quarter potatoes; place in a large saucepan or kettle and cover with water.

    Bring to a boil; cook until tender.

    Drain and transfer to a large bowl; mash (do not add milk, butter or seasoning).

    Add salad dressing and mix well.

    Add cheese, salt, pepper and half of the bacon.

    Spread evenly into a greased 13-in. x 9-in. x 2-in. baking dish.

    Sprinkle with chives and remaining bacon.

    Bake, uncovered, at 350 degrees for 20 minutes.
