Ingredients
- 4 each lettuce leaves large pieces
- 1 1/2 pounds ground beef, lean
- 4 large eggs divided
- 1 medium yellow onion or large sized
- 4 each scallions, spring or green onions
- 3 cloves garlic
- 1 each serrano chiles
- 4 large mushrooms, portabello
- 1 x oregano as needed
- 1 x coconut oil as needed
- 1 x black pepper as needed
- 1 x tomatoes sliced, as needed
- 1 x avocados sliced, as needed
- 1 x - Chimichurri Sauce (see link below)
Directions

1Add ground beef to large mixing bowl.

2In a food processor, combine scallions, garlic and Serrano.

3Pulse until well combined and add to ground beef.

4Dice yellow onion and saute with coconut oil over medium to medium high heat until translucent.

5Add onions to ground beef mixture.

6Add 1 egg to meat mixture.

7Mix well.

8Form beef into 4 equal patties.

9In frying pan, add some coconut oil on medium to medium-high heat.

10When oil is hot, add patties.

11Cook for about 3 to 4 minutes on each side or desired wellness.

12Set Aside.

13Use the oil from the patties to cook eggs (over easy, sunny side up, etc) Sprinkle with pepper.

14Set Aside.

15Toss Portobello mushrooms with olive oil and oregano.

16Grill on George Foreman for about 2 to 3 minutes.

17Set aside.
