  • 4-6 lb of pork shoulder/butt
  • 1 onion
  • 4 cloves of garlic
  • 1/2 cup lime juice
  • 2.5 tablespoons brown sugar
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon liquid smoke
  • 3/4 teaspoon red pepper flakes
  • 80 ml Worcestershire sauce
  • 1/4 teaspoon cayenne pepper
  • 1/4 mustard powder
  • 1/4 cup bourbon

    -Chop garlic and onion

    -Butcher pork, removing fat and sinew

    -Mix sugar, paprika, salt and pepper and rub pork

    -Place in crockpot

    -Drizzle with liquid smoke

    -Add Worcestershire, red pepper, cayenne and mustard, bourbon

    -Cook on low for 8 hrs
