  • 4 eggs
  • 1 1/2 cups sugar
  • 11/16 cup olive oil
  • 1 5/8 cups pumpkin boiled and drained
  • 4 cups flour
  • 2 teaspoons yeast
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 3 1/2 tablespoons butter
  • 6 2/3 tablespoons powdered sugar
  • 7/8 cup cream cheese
  • 1 pinch cinnamon
  • ground almonds or hazelnuts, optional

Directions

    For the cake, preheat oven to 250 degrees 250°C (approximately 480°F).

    Beat eggs with sugar until foamy.

    Add oil and pumpkin and continue mixing.

    Add sifted flour, baking powder, baking soda, salt and spices to egg mixture and mix well.

    Pour batter into prepared baking dish and bake for 25-30 minutes.

    Let cake cool completely before frosting.

    For the frosting, beat butter with powdered sugar until fluffy.

    Add cream cheese and a pinch of cinnamon and mix on low speed until frosting is smooth and creamy.
