- 2 cup gluten free flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1 tbsp ground flax seed (combined with 3 tbs hot water)
- 2 cup hot water
Directions

1Preheat oven to 500F and preheat baking pan.

2Combine 2 cups gluten free flour with cream of tartar and baking soda.

3Finely grind flax seed.

4Combine flax with 3 Tbs hot water.

5With the bread hook on low, slowly mix in the 2 cups of hot water and flax seed mixture.

6Once a slightly sticky dough has formed remove from mixer.

7Roll dough into a ball on (gluten free) floured surface.

8Break and roll into four ball pieces and use a roller to flatten.

9The dough will be delicate and light.

10Put on preheated baking pan and place on bottom rack.

11Should rise (not quite doubling in thickness, but able to slice in two for sandwiches) and brown within 10 minutes.

12Remove immediately.

13Allow to cool.

14Slice in half to make sandwiches.

15Brushed with olive oil and sprinkled sea salt, will add herbs next time as well.
