Ingredients

  • 1/2 c. tofu
  • 2/3 c. applesauce
  • dash of parsley flakes
  • 1/2 c. chopped onions
  • 1 can cream of mushroom soup
  • 1 c. uncooked brown rice
  • whole wheat cracker crumbs
  • 2 c. Millet Cheese (refer to Millet Cheese recipe)
  • 1/4 avocado

Directions

    Cook rice in 1 3/4 cups water.

    Mix avocado, parsley flakes, onions, soup, cheese and rice.

    Spray casserole dish with Pam. Add mixture.

    Sprinkle top of casserole with Millet Cheese, then add crushed cracker crumbs on top of Millet Cheese.

    Bake at 350° for 30 minutes.
