- 1/2 c. tofu
- 2/3 c. applesauce
- dash of parsley flakes
- 1/2 c. chopped onions
- 1 can cream of mushroom soup
- 1 c. uncooked brown rice
- whole wheat cracker crumbs
- 2 c. Millet Cheese (refer to Millet Cheese recipe)
- 1/4 avocado
Directions

1Cook rice in 1 3/4 cups water.

2Mix avocado, parsley flakes, onions, soup, cheese and rice.

3Spray casserole dish with Pam. Add mixture.

4Sprinkle top of casserole with Millet Cheese, then add crushed cracker crumbs on top of Millet Cheese.

5Bake at 350° for 30 minutes.
