Ingredients

  • 1 large head lettuce (romaine or butter variety), broken into pieces, washed and chilled
  • 1 hard-boiled egg, quartered
  • 1 small clove garlic
  • 2 sprigs parsley
  • 1 tsp. tarragon mustard
  • 1/4 tsp. dried chervil
  • 1 Tbsp. raspberry vinegar
  • 1 Tbsp. lemon juice
  • 6 Tbsp. olive oil
  • 1/4 tsp. salt
  • pepper to taste

Directions

    In a food processor, process the egg and set aside (use steel blade).

    With machine running, drop the garlic and process until minced.

    Add parsley and process until chopped.

    Add all remaining ingredients except egg and lettuce.

    Process until well blended.

    Toss with lettuce and sprinkle with egg on top.
