Salmon Bisque

  • 1 lb. can salmon (oil included)
  • 1 c. canned tomatoes
  • 1/3 c. chopped onion
  • 2 Tbsp. parsley
  • 2 c. chicken stock
  • 4 Tbsp.butter
  • 4 Tbsp. flour
  • 3 c. milk
  • 1 1/2 tsp. salt
  • 1/2 tsp. paprika

Directions

    Combine in blender salmon, tomatoes, onion, parsley and chicken stock.

    Simmer this for 20 minutes.

    In separate pan, melt butter.

    Add flour and stir in milk.

    Add salt and paprika.

    Add milk mixture to salmon mix once it's smooth and boiling.

    Do not let bisque boil.

    Makes 8 cups.
