- 3/4 c. Chablis or other dry white wine
- 1/2 c. water
- 1 lb. bay scallops
- 1/2 c. red pepper strips
- 1/3 c. diced celery
- 1/4 c. chopped green onions
- 3 Tbsp. lemon juice
- 1/8 tsp. white pepper
- leaf lettuce
Directions

1Combine wine and water in a medium saucepan; bring to a boil. Add scallops and cook 3 to 5 minutes.

2Drain and let cool. Combine scallops and next 5 ingredients in a shallow dish.

3Cover and chill 3 to 4 hours, stirring occasionally.

4To serve, line individual scallop shells with leaf lettuce; top with scallop mixture.
