- 4 eggs
- 2 tablespoons of good quality olive oil
- 2 cans of peeled tomatoes
- cumin, to your taste
- 1 dash balsamic vinegar
- salt and pepper
Directions

1put olive oil in a large frying pan and heat on medium ( we are not frying the sauce).

2put in the 2 cans of tomato and sprinkle some cumin, salt and pepper to taste.

3a dash of balsamic vinegar.

4Now cook sauce on a gentle heat for about 15 minutes.

5Make a spot in the sauce by using a spoon to make a 'well' in it.

6put egg in said spot.

7cover and cook to your liking.
