  • 1/2 bushel tomatoes (make juice)
  • 3 lb. onions, chopped fine
  • 3 sweet peppers
  • 2 cloves garlic, chopped
  • 48 oz. tomato paste
  • 1 c. sugar
  • 1/2 c. or less salt
  • 1 1/2 c. oil
  • 2 Tbsp. oregano
  • 2 Tbsp. sweet basil

    Put in large kettle juice, onions and peppers.

    Add the remaining ingredients.

    Cook for 1 hour.

    Fill jars and seal. Makes 11 to 12 quarts.
