- 1 lb. yellow squash
- 1 tsp. salt
- 1 c. chopped shallots
- 1/2 c. chopped celery
- 1/4 c. chopped mushrooms
- 1/4 c. chopped green peppers
- 1/4 c. chopped pimento
- 1 stick margarine
- 1/2 c. oatmeal
- 3/4 c. milk
- 1 beaten egg
- 1/2 c. bread crumbs
- salt and pepper to taste
Directions

1Boil squash with salt until tender.

2Whip squash until smooth. Saute shallots, peppers, celery and mushrooms with stick of margarine.

3Blend egg, milk and oatmeal.

4Combine drained squash, vegetables and egg mixture.

5Add pimento.

6Pour into large buttered casserole and cover with bread crumbs.

7Bake at 400° for 30 minutes.
