Squash Casserole

Ingredients

  • 1 lb. yellow squash
  • 1 tsp. salt
  • 1 c. chopped shallots
  • 1/2 c. chopped celery
  • 1/4 c. chopped mushrooms
  • 1/4 c. chopped green peppers
  • 1/4 c. chopped pimento
  • 1 stick margarine
  • 1/2 c. oatmeal
  • 3/4 c. milk
  • 1 beaten egg
  • 1/2 c. bread crumbs
  • salt and pepper to taste

    Boil squash with salt until tender.

    Whip squash until smooth. Saute shallots, peppers, celery and mushrooms with stick of margarine.

    Blend egg, milk and oatmeal.

    Combine drained squash, vegetables and egg mixture.

    Add pimento.

    Pour into large buttered casserole and cover with bread crumbs.

    Bake at 400° for 30 minutes.
