Squash Casserole

Ingredients

  • 2 1/2 to 3 lb. squash (Italian or summer)
  • 12 oz. pkg. seasoned stuffing mix
  • 1 c. margarine or butter, melted
  • 8 oz. sour cream
  • 1 can cream of chicken soup (undiluted)

Directions

    Cut squash into small pieces.

    Blend together squash, sour cream and cream of chicken soup.

    Mix stuffing with margarine and spread half of crumbs in 9 x 13-inch pan/casserole dish.

    Spread squash mixture over this and top with remaining buttered crumbs. Bake uncovered at 350° for approximately 30 minutes.

    Casserole can be topped with shredded cheese, if desired.
