  • 12 c. grated squash (yellow)
  • 4 medium bell peppers
  • 4 hot peppers for hot relish (if desired)
  • 4 c. onions
  • 1 large jar pimientos
  • 5 tsp. salt
  • 3 c. vinegar
  • 2 tsp. pickling spice (in bag)
  • 4 c. sugar
  • 1 tsp. turmeric

    Mix squash, peppers, onion and pimientos.

    Cover and let set 3 hours or overnight.
