  • 6 3/4 tablespoons olive oil
  • 1 3/4 cups brown sugar
  • 5 eggs
  • 4 3/4 tablespoons honey
  • 1/2 cup port wine
  • 2 3/16 cups cake flour
  • 1 teaspoon baking powder

Directions

    Preheat oven to 180°C (approximately 350°F).

    Mix olive oil with the sugar and beat well.

    Add the eggs one by one, beating about 1 minute after adding each egg.

    Add honey, wine and flour with baking powder.

    If adding fruit, dust fruit with flour, so that it doesn't sink to the bottom during baking.

    Pour batter into a greased and floured Bundt pan.

    Bake in preheated oven for about 1 hour.

    Let cool slightly before removing from pan
