  • 2 cups Hearts Of Romaine Lettuce, Chopped
  • 2 Tablespoons Chipotle Ranch Dressing
  • 1/4 cups Corn Kernels
  • 1/2 cups Pico De Gallo
  • 1/4 cups Black Beans
  • 5 pieces Corn Tortilla Chips
  • 1/2 whole Avocado, Sliced
  • 1/2 cups Carnitas, Chicken Or Carne Asada (optional)
  • 1/2 cups Shredded Monterey Jack Cheese

Directions

    1. Wash and chop Romaine lettuce and place in a bowl.

    2. Add dressing to the lettuce and mix well.

    3. Add corn, pico de gallo and beans to the lettuce mixture and toss.

    To plate, place half of the lettuce/corn/bean mixture on a salad plate. Layer the corn chips, then the rest of the lettuce mix. Lay the sliced avocado, meat and sprinkle with Monterey Jack cheese.
