  • 1 large pkg. turkey necks
  • 1 bag large egg noodles
  • 1 large finely chopped onion
  • 1 large finely chopped bell pepper
  • 1 large can tomatoes
  • 1 medium bag baby carrots
  • 1 can sweet peas
  • 3/4 to 1 1/2 tsp. salt
  • 1 1/2 tsp. pepper
  • 2 tsp. crushed red pepper (optional)
  • 1/4 c. flour

Directions

    Boil turkey necks with salt and pepper until almost tender. Add onions, bell pepper and carrots and continue to simmering until carrots are almost tender.

    Add noodles; simmer for 4 minutes.

    Add tomatoes, peas and crushed red pepper.

    Make a paste with flour and water.

    Stir in and cook for approximately 5 minutes.

    Serve with Mexican cornbread.
