- 1 (3 lb.) venison roast
- 4 Tbsp. oil
- 3 medium onions, peeled and sliced
- 2 garlic cloves, chopped
- 1 c. red wine vinegar
- 3/4 c. beef broth
- 8 medium potatoes, peeled and sliced
- 2 large carrots, peeled and sliced
Directions

1Soak roast overnight in salted water.

2Remove, dry with paper towel.

3Brown in hot oil.

4Add onions, cook until soft.

5Add garlic, vinegar, broth and bring to boil.

6Stir often.

7Add potatoes and carrots, reduce heat, simmer about 30 to 45 minutes or until done.
