  • 1 (3 lb.) venison roast
  • 4 Tbsp. oil
  • 3 medium onions, peeled and sliced
  • 2 garlic cloves, chopped
  • 1 c. red wine vinegar
  • 3/4 c. beef broth
  • 8 medium potatoes, peeled and sliced
  • 2 large carrots, peeled and sliced

    Soak roast overnight in salted water.

    Remove, dry with paper towel.

    Brown in hot oil.

    Add onions, cook until soft.

    Add garlic, vinegar, broth and bring to boil.

    Stir often.

    Add potatoes and carrots, reduce heat, simmer about 30 to 45 minutes or until done.
