- 2 tablespoons reduced-calorie margarine
- 3 medium onions, diced
- 1 lb 90% lean ground beef
- 1 garlic clove, minced
- 1 teaspoon table salt
- 12 teaspoon black pepper
- 12 lb frozen mixed vegetables
- 1 cup red wine
- 12 teaspoon dried basil
- 14 teaspoon thyme
- 3 cups beef broth
- 1 (28 ounce) can diced tomatoes
- 1 medium potato, peeled and diced
- 1 cup diced celery
- 1 cup diced carrot
Directions

1In a large soup pot, melt margarine.

2Saute onion until it is soft and translucent, 3-5 minutes.

3Add garlic and saute 1 minute until fragrant.

4Add beef and saute, breaking up chunks with a wooden spoon, until all the pinkness is gone.

5Add remaining ingredients and simmer, covered, 1 hour.

6Season with salt and pepper to taste.
