Ingredients

  • 2 tablespoons reduced-calorie margarine
  • 3 medium onions, diced
  • 1 lb 90% lean ground beef
  • 1 garlic clove, minced
  • 1 teaspoon table salt
  • 12 teaspoon black pepper
  • 12 lb frozen mixed vegetables
  • 1 cup red wine
  • 12 teaspoon dried basil
  • 14 teaspoon thyme
  • 3 cups beef broth
  • 1 (28 ounce) can diced tomatoes
  • 1 medium potato, peeled and diced
  • 1 cup diced celery
  • 1 cup diced carrot

Directions

    In a large soup pot, melt margarine.

    Saute onion until it is soft and translucent, 3-5 minutes.

    Add garlic and saute 1 minute until fragrant.

    Add beef and saute, breaking up chunks with a wooden spoon, until all the pinkness is gone.

    Add remaining ingredients and simmer, covered, 1 hour.

    Season with salt and pepper to taste.
