  • 6 c. peeled zucchini
  • 1 c. crushed pineapple
  • 3 (3 oz.) pkg. apricot Jell-O
  • 6 c. sugar
  • 1/2 c. lemon juice

Directions

    Gently boil zucchini for 15 minutes on low heat.

    Stir often. Add sugar and boil 6 more minutes.

    Remove from heat and add Jell-O; mix well.
