- 3 cans asparagus
- 2 c. milk
- 4 Tbsp. butter
- 1/4 c. all-purpose flour
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 1/8 tsp. cayenne pepper
- 1/2 to 1 c. sharp Cheddar cheese (optional)
- 1/2 to 1 c. toasted slivered almonds (optional)
Directions

1Make white sauce.

2Melt butter in top of double boiler.

3Add all flour slowly, stirring constantly until roux is made. Gradually add milk, stirring continuously until all is used. Sauce will be thin at first but will eventually thicken to desired consistency.

4Add salt and both peppers and stir.

5May add cheese at this point.

6Stir until cheese melts.
