- 1 beef brisket
- 3 oz. liquid smoke
- celery, garlic and onion salt
- pepper
- Worcestershire sauce
Directions

1In large roast pan, place brisket.

2Pour liquid smoke over brisket, generously sprinkle both sides with celery, garlic and onion salt.

3Cover and refrigerate overnight.

4Next day, sprinkle both sides with pepper and Worcestershire sauce; cover and cook. Trim excess fat from brisket.

5Cook 5 hours at 275°, uncovered and pour 3 ounces barbecue sauce on meat.

6Cook 1 hour, uncovered. Remove meat to platter and sauce.

7Cool.

8Skim fat.

9Mix 2 tablespoons flour with 1/2 cup water, stir into meat sauce.

10Add more barbecue sauce to taste, slice brisket and serve with piping hot sauce.
