Cheese Grits

  • 4 1/2 c. water
  • 1 c. quick grits
  • 3/4 tsp. Lawry's salt
  • 1/2 tsp. salt
  • 3/4 lb. Velveeta cheese, cubed
  • 2/3 stick oleo
  • 4 to 5 shakes Tabasco sauce (or more, if desired)
  • 2 large eggs, slightly beaten

Directions

    Bring water to a boil. Add grits, Lawry's salt and salt.

    Cook 4 or 5 minutes.

    Add Velveeta cheese, oleo and Tabasco sauce. Cook on low heat until smooth, stirring constantly.

    Add eggs.

    Pour into ungreased 1 1/2-quart casserole. Bake 1 hour at 250°.
