  • 2 12 cups leftover mashed potatoes (or make fresh)
  • 23 cup cheddar cheese, grated
  • 2 tablespoons prepared barbecue sauce
  • 1 green onion, sliced (optional)

Directions

    In a large skillet, over med heat, cook leftover mashed potatoes, stirring for 4-5 minutes or until potatoes are heated through.

    Removed from cheat and stir in cheese and BBQ sauce.

    Serve sprinkled with green onions if using.
