- 3 baking potatoes (1 1/2 lb.), quartered
- 3/4 lb. cooked corned beef
- 2 Tbsp. each: butter and olive oil
- 1 large red onion, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 1/2 each: salt and pepper
- chopped fresh parsley for garnish
Directions

1Place potatoes in saucepan.

2Cover with water; cover pan and boil 10 minutes or until tender.

3Drain and peel.

4Cut potatoes and beef into 3/4-inch dices.

5In a nonstick skillet over medium-high heat, melt butter in oil.

6Saute onion 5 minutes.

7Add pepper and seasonings; saute for 10 minutes.

8Add beef and cook 5 minutes, flipping with spatula.

9Top with parsley.
