General Tsos Chicken

- 1 Tablespoon White Wine Vinegar
- 1/2 cups Soy Sauce
- 1 cup White Wine
- 1/4 cups Sesame Oil
- 1 teaspoon Ginger
- 1 cup Brown Sugar
- 1 Tablespoon Cornstarch
- 1 cup Canola Oil
- 4 cloves Minced Garlic
- 1 Tablespoon Crushed Red Peppers (or More To Make Spicier)
- 1 whole Beaten Egg Yolks
- 1- 1/2 cup Ice Cold Water
- 1- 3/4 cup Sifted Flour
- 1 teaspoon Sifted Baking Powder
- 1/2 teaspoons Salt
- 1 pound Chicken Breast Or Thighs Diced Into About One Inch Pieces
- 1 bunch Green Onions, For Garnish (optional)
- Oil, For Frying
Directions

1Sauce:

2Place white wine vinegar, soy sauce, white wine, sesame oil, ginger, brown sugar and cornstarch into a blender and blend just until combined.

3Set aside just for a moment.

4Place canola oil, minced garlic and crushed red peppers into a medium large saucepan on medium heat for a couple of minutes.

5Then gently whisk the blended ingredients into the saucepan.

6Continue to whisk on medium heat for a couple of minutes until thickened.

7Salt and pepper to taste.

8Keep warm until ready to pour over fried tempura chicken.

9To make the tempura fried chicken:

10Whisk beaten egg yolks, cold water, flour, baking powder and salt together until combined.

11Set aside.

12Pour about 1 to 1 1/2 inch of oil into a saucepan that has high edges.

13Preheat oil to 350 degrees F and maintain temperature.

14Coat chicken pieces with tempura batter.

15Cook about 10 pieces at a time so that the oil does not lose temperature.

16Flip each piece over once the bottom side is nicely browned.

17After the center of chicken has reached at least 165 degrees, remove them from the oil with tongs and place on a baking sheet lined with paper towels to drain excess grease.

18Place chicken on a plate or platter and top with General Tsos sweet and spicy sauce and garnish with green onions if desired.

19Serve with rice or veggies.

20Put it in take-out boxes and serve to your family.

21They will ask you to pick some up at the same place again next week.

22Notes: Tempura is optional.

23This recipe is just as delicious without the tempura breading.

24Just cook chicken, drain the juices off of the cooked chicken and stir chicken into the General Tsos sauce.

25Tempura can also be purchased in grocery stores in a box if you would like to skip a step but, truth is, its not much easier than making it your very own self.
