- 1 1/3 cups sugar
- 2/3 cup water
- Nonstick cooking spray
- 2/3 cup blanched hazelnuts, toasted and chopped
Directions

1In a small saucepan, mix the sugar with the water until it looks like wet sand.

2Bring to a simmer over medium-low heat, stirring gently to dissolve the sugar.

3Simmer without disturbing for 20 minutes, or until the mixture turns a light amber color.

4Spray a small rimmed baking sheet with cooking spray.

5Spread the chopped hazelnuts out on the baking sheet.

6Pour the caramel over the hazelnuts and let sit for 10 minutes, or until hardened.

7Break into shards.
