Lemon Mousse

- 1 envelope unflavored gelatin
- 2 to 3 Tbsp. cold water
- 2 eggs, separated
- 4 Tbsp. sugar
- juice from 1 lemon
- grated rind from 1/2 lemon
- 1 1/3 c. whipping cream
- thinly sliced lemon peel (for garnish)
Directions

1Dissolve gelatin in water.

2Let stand 5 minutes.

3Beat egg yolks and sugar until light and fluffy. Add lemon juice and lemon rind. Blend carefully. Melt gelatin with water over low heat. Add to egg mixture, stirring well. Whip the cream. Fold cream into egg mixture. Beat egg whites until stiff peaks form. Fold into egg mixture.

4Pour mousse into 4 serving bowls. Chill in refrigerator for about 2 1/2 hours. Garnish mousse with lemon peel and whipped cream.

5Makes 4 servings.
