Ingredients
- 3 chicken breasts, skinned, deboned and halved
- 3 eggs
- 1/4 c. grated Parmesan cheese
- 4 Tbsp. fresh parsley, minced
- salt and pepper
- 1/4 c. cooking oil
- 3 Tbsp. butter
- 1 lemon
- 1 1/4 c. chicken broth
- 2 Tbsp. Marsala wine
Directions

1Flatten chicken slightly and dust with flour.

2Mix eggs with Parmesan cheese, 2 tablespoons parsley, salt and pepper. Dip chicken in egg mixture.

3Heat oil in pan and brown chicken on both sides over medium-high heat. Discard oil and wipe pan out.

4Melt butter in pan. Add chicken broth and 2 tablespoons parsley. Squeeze juice from lemon in sauce and put lemon in sauce.

5Return chicken to pan.

6Simmer 10 minutes or until tender.

7Add wine and pepper.

8Simmer 5 minutes. Remove to serving dish.

9Pour sauce over chicken and garnish with lemon and parsley.
