  • 3 bunches sliced green onions
  • 1 pkg. Knorr leek soup
  • 1 c. diced ham
  • 1 clove garlic, minced
  • 3 Tbsp. butter
  • 4 c. chicken broth, fat removed
  • 4 c. thinly sliced cabbage
  • 4 c. diced, peeled potatoes
  • 1 bay leaf
  • 1 c. heavy cream or half and half
  • salt and pepper
  • 4 Tbsp. chopped chives or parsley

Directions

    Cook green onion, ham and garlic in butter in stock pot over medium-low heat until onions are tender.

    Add broth, Knorr leek soup mix, cabbage, potatoes and bay leaf; simmer 30 minutes or until potatoes are tender.

    Stir in cream and continue to simmer until heated through.

    Add salt and pepper to taste.

    Garnish individual servings with parsley or chives.

    Serves 8.
