  • 1 3/4 c. pumpkin
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 2 eggs, beaten
  • 1 c. evaporated milk
  • 1/2 c. water

Directions

    Turn pumpkin into saucepan.

    Cook over direct heat 10 minutes or until somewhat dry or caramelized, stirring constantly.

    Remove from heat.

    Blend sugar, salt and spices.

    Stir beaten eggs into hot pumpkin; add evaporated milk.

    Beat for 15 minutes.

    Heat oven to 450°, then reduce heat to slow 300° and continue baking for approximately 45 minutes or longer until pumpkin is done.
