Split Pea Soup

Ingredients
- 1 lb. dried split peas
- 1 ham hock
- 1 medium onion, finely chopped
- salt and pepper to taste
- 2 qt. water
- 1 c. celery, finely chopped
- 2 carrots, finely chopped or shredded
Directions

1Combine peas and water.

2Bring to a boil and boil 2 minutes. Remove from heat.

3Cover and let set for 1 hour.

4Add remaining ingredients.

5Bring to boiling point.

6Reduce heat and simmer 2 1/2 to 3 hours or until peas look creamed and ham hock is tender. Remove ham hock.

7Trim meat from bone and dice.

8Return meat to soup.

9Heat thoroughly and serve.

10Additional water or milk may be added to soup for a thinner consistency.
