Wild Rice Soup

- 2 c. cooked wild rice
- 2 Tbsp. butter
- 1 Tbsp. onion, minced
- 1/3 c. flour
- 4 c. chicken broth
- 2 c. cooked diced chicken
- 1/2 tsp. salt
- 1 c. half and half
- minced parsley or chives
- 2 Tbsp. sherry (optional)
Directions

1Prepare wild rice as directed on package.

2Melt butter in saucepan, saute onion until tender.

3Blend in flour; gradually add broth.

4Cook, stirring constantly, until mixture boils; boil and stir 1 minute.

5Stir in rice, chicken and salt; simmer about 5 minutes.

6Blend in half and half and sherry; heat to serving temperature.

7Garnish with parsley or chives.

8Serves 6.
