  • 2 lb. California Pea Beans or Navy Beans
  • 1 tsp. Baking soda
  • 1 lb. Salt Pork
  • 1 medium Onion, peeled
  • 8 Tbsp. Sugar
  • 2/3 c. Molasses
  • 2 tsp. Dry Mustard
  • 4 tsp. Salt
  • 1/2 tsp. Pepper
  • 6-1/2 c. Warm Water

    Soak the beans overnight. In the morning, parboil them for 10 minutes with the Baking Soda. Drain in a colander and rinse with cold water.
