  • 1-1/2 cup All Purpose Flour (I Have Used GF Bisquick, And Gluten Free Pantry AP Flour With Great Results)
  • 1 cup Old Fashioned Oats
  • 2 teaspoons Baking Powder
  • 1/2 teaspoons Salt
  • 1 whole 5.25 Package Of Vanilla Pudding Mix
  • 1/2 cups Brown Sugar
  • 1 Tablespoon Vanilla Extract
  • 3/4 cups Canola Oil
  • 1-1/4 cup Milk
  • 2 whole Eggs, Beaten
  • 1 cup Mini Chocolate Chips, Divided

    Preheat oven to 350°F.

    Mix flour, oats, baking powder, salt, vanilla pudding mix, and sugar, combine well.

    Mix wet ingredients in a bow. Add wet ingredients and half of the chocolate chips to dry ingredients, mix well.

    Pour into greased 9-inch loaf pan, top with remaining chocolate chips. Bake for 1 hour.
