- 1 head cauliflower, broken into florets
- 2 large carrots, peeled and thinly sliced
- 1/2 cup pepper rings, drained
- 1/2 red bell pepper, seeded and chopped
- 1 cup white vinegar
- 1 teaspoon mustard seeds
- 1/2 teaspoon black peppercorns
- 1/4 cup sugar
Directions

1Combine cauliflower, carrots, pepper rings, and bell pepper in a bowl.

2In a small saucepan, add sugar, vinegar, mustard seeds, peppercorns and heat over a low heat until sugar is dissolved.

3Pour marinade over vegetables and refrigerate, stirring occasionally for at least 24 hours.

4Drain and serve. Makes 1 quart.
