  • 1 (20 ounce) package Simply Potatoes Shredded Hash Browns
  • 1 bunch green onion, chop white for cooking (chop green tops for garnish)
  • 1 medium red bell pepper, small dice
  • 1 tablespoon olive oil (evoo, soy, veggie, etc.)
  • 3 large eggs
  • 6 ounces frozen spinach, excess water drained
  • 1 teaspoon salt & pepper
  • 2 ounces goat cheese, crumbled
  • 2 ounces shredded cheddar cheese
  • oil, for cook & crisp
  • green onion
  • sour cream
  • salsa
  • fresh roma tomato, chopped

    In non-stick pan, saute red bell and green onion with 1 tablespoon oil until tender and browned.

    Place in large bowl and let cool.

    Add package of Simply Potatoes Shredded Hash Browns to bell and onion mixture.

    Also add spinach, both Goat & Cheddar cheeses, and eggs.

    Get your CLEAN hands dirty: mix the ingredients in the bowl evenly and divide into 6-8 portions.
