  • 3/4 c. thinly sliced fresh mushrooms
  • 1/2 c. seeded and chopped cucumber
  • 1 Tbsp. sliced green onion
  • 1 clove garlic, minced
  • 2 Tbsp. balsamic vinegar
  • 1/8 tsp. ground pepper
  • 1 hoagie bun
  • 2 lettuce leaves
  • 2 oz. thin sliced ham
  • 2 oz. thin sliced turkey
  • 4 slices tomato
  • 1 oz. shredded part-skim Mozzarella cheese

Directions

    Combine first 6 ingredients; let stand 30 minutes. Slice bun in half lengthwise; pull out soft inside of top and bottom, leaving a shell. Spoon mushroom mixture into each half of bun; cover with a lettuce leaf. Top with ham, turkey and tomato slices. Sprinkle with shredded cheese and serve.
