Vegetable Chicken Delight

Ingredients
- 4 large boneless chicken breasts, cut into chunks
- 3 medium zucchini, cut into chunks
- 3 medium meaty tomatoes, cut into chunks
- 4 Tbsp. dried basil
- 1 Tbsp. dried oregano
- 1/4 c. white vinegar
- 1/4 c. olive oil
- 3 cloves garlic, crushed
- cooked rice or your favorite pasta
Directions

1Cut all vegetables first and place in large mixing bowl.

2Add vinegar, olive oil, basil and oregano (salt to taste is purely optional).

3Toss so that all vegetables are coated.

4Set aside to briefly marinate.

5Prepare your chicken.

6Heat a large skillet or electric frypan with 2 tablespoons additional olive oil.

7When hot, brown garlic in oil.

8When done, add chicken and toss until it just turns white.

9Add vegetables with all the liquid.

10Toss to mix and turn down heat.

11Cover and let simmer, stirring occasionally, for approximately 15 to 20 minutes, or until veggies are just tender and not soggy.

12Spoon over rice or pasta.
