- 4 chicken breasts, skinned
- 2 Tbsp. olive oil
- 1/2 c. chopped onion
- 2 cloves garlic, minced or pressed
- 1/2 c. sliced mushrooms
- 1/2 c. chopped green pepper
- 2 c. canned diced tomatoes with juice
- 1/2 (6 oz.) can tomato paste
- 1 c. chicken broth
- 1/2 c. dry white wine
- 1 tsp. dried basil leaves
- ground black pepper
- 1/2 c. chopped parsley
Directions

1Gently brown chicken in 1 tablespoon of the oil.

2Remove.

3Add remaining oil.

4Saute onion and garlic for 5 minutes.

5Add mushrooms.

6Cook 4 minutes longer.

7Stir in green pepper, tomatoes, tomato paste, chicken broth, wine, basil and black pepper.

8Cover and simmer 20 minutes.

9Add chicken.

10Cover and simmer gently 25 minutes longer.

11Serve sprinkled generously with parsley.
