  • 1 ripe avocado
  • 1/4 c. vegetable oil
  • 2 Tbsp. lemon juice
  • 1 clove garlic
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 3 large navel oranges
  • 1 small red onion
  • 1 head bibb lettuce, separated into halves
  • 2 Tbsp. sliced ripe olives

Directions

    Halve avocado; remove pit and peel.

    Slice avocado into container of electric blender; add oil, lemon juice, garlic, sugar, salt and mustard.

    Cover; whirl until smooth.

    Scrape dressing into small serving bowl.

    Pare oranges, removing rind and white membrane.

    Cut into 1/4-inch thick crosswise slices.

    Cut onion into 1/8-inch slices.

    Line large chilled salad plate with lettuce leaves.

    Arrange orange slices overlapping with onions on lettuce. Spoon some of the avocado dressing over top.

    Garnish with olives. Serve with remaining dressing.
